COOKING WITH JEN 101 ( Healthy Lunch Ideas)
While I'm Drinking some mimosas and eating some macaroons I will give you guys some of my favorites healthy lunch recipes, This are easy to make and yes I know the word ( Healthy ) is never a yummy recipe, but guess what you are so wrong!. This 2 options are delicious plates. Ready To Cook? Lets get started!
PESTO TUNA ANGEL HAIR PASTA
INGREDIENTS
1 5 oz can Organic Tuna with Pesto & Olive Oil 2 cups angel hair pasta ( whole gain ) 1/2 cup Organic Parmesan cheese, for garnish
DIRECTIONS

Boil water and prepare angel hair pasta to the perfect aldente. Add the can of Tuna with Pesto & Olive Oil to a skillet and sear over medium heat for 2 minutes before adding the pasta. Combine and top with grated Parmesan cheese before serving, you can also add any vegetable you want like I did. Enjoy!
PESTO AND SUNDRIED TOMATO TUNA MELT SANDWICH
INGREDIENTS
1 5 oz can of Tuna , drained ¼ cup sun dried tomatoes, chopped 2 tablespoons Greek yogurt 1 tablespoon basil pesto 1 teaspoon fresh lemon juice 1 teaspoon salt and pepper, to taste 4 slices whole wheat bread, toasted 2 slices provolone cheese
Serving For Two

DIRECTIONS
Place aluminum foil in baking sheet and start preheating the broiler for this tuna melt sandwich recipe. Combine sundried tomatoes, tuna, basil pesto, Greek yogurt, and lemon juice. Season with salt and pepper for taste before mixing. Separate portions of tuna mixture onto the slices of bread. Add a slice of provolone on top before placing on baking sheet. Put under broiler until cheese is bubbly and melted.
