Cooking With Jen 101 ( Birds Edition )


Roasted Garlic and Sage Chicken


Serves: 4 // Cooking Time: 45 minutes


I debated naming this “Perfectly Baked Garlic Chicken” because this chicken truly is perfect. It’s juicy and tender, and the notes of sage remind me of Thanksgiving turkey. This recipe has ton of garlic since I’m a huge garlic lover, but feel free to cut it back if you’d like. Serve over a purée or rice with grilled veggies.


Ingredients

2 Tablespoons olive oil

4 Tablespoons chopped fresh sage

8 Cloves garlic, minced

4 Bone-in chicken breast

Pink Himalayan salt

Ground black pepper


Directions

  1. Preheat the oven to 425F

  2. In a small bowl, mix the oil, sage, and garlic. Rub the chicken with the mixture, thoroughly coating it and making sure to get under the skin. Season with salt and pepper.

  3. Place the chicken in a baking dish. Bake for 10 minutes, or until the skin starts to crisp. Reduce the heat to 375F and bake for 30 to 35 minutes, or until the internal temperature reaches 165F. Remove and slice to serve.

Maple- Glazed Turkey


Serves: 4 // Cook Time 20 Minutes


I Packed some meal preps for Mase and Oscar with this turkey, and they can't stop raving about how good their lunch was ( otherwise it's crickets ). This turkey is amazing by itself, thrown on a sandwich, or add to a salad and you will be obsessed, you can also pair it with rice or smash for a dinner and your family won't stop talkings about.


Ingredients


2 Turkey tenderloins

Pink Himalayan salt

Coconut oil (for the pan)

1 Teaspoon smoked paprika

3 Tablespoon or pure maple syrup

1 Teaspoon chopped fresh thyme


Directions

  1. Preheat the oven to 400F

  2. Season the turkey with a few pinches of salt. Lightly grease a medium skillet with the coconut oil and heat over high heat. Sear the turkey for 2 minutes on each side, or until browned.

  3. Place the turkey in a baking dish and coat with the paprika. Roast for 5 minutes, then remove from the oven and glaze with the maple syrup and thyme. Return it to the oven and finish roasting for 10 to 12 minutes, or until the internal temperature reaches 165F and is completely cooked through.

  4. Slice and serve however you want.
